Someburros Unveils Exciting Plans for Maricopa Eatery

Someburros maps out Maricopa restaurant

Chandler-based Someburros has filed a comprehensive development package with the City of Maricopa, detailing architectural, landscaping, and site plans for a new drive-thru restaurant at Stonegate.

The submitted documents, dated May 21, outline a 3,519-square-foot building featuring indoor dining, a 400-square-foot covered patio, and a single-lane drive-thru at the intersection of Maricopa-Casa Grande Highway and Stonegate Road.

This project first gained attention late last year when Someburros appeared in initial planning discussions. According to project manager John Barclay of Upward Architects, the restaurant aims to operate from 10:30 a.m. to 9 p.m. daily.

The floor plan features 17 indoor tables and an additional seven on the patio.

Elevations include parapets reaching 25 feet in height, utilizing a combination of stucco and brick veneer. Clerestory windows with frosted glazing and wood-supported shade structures enhance the design. The color palette incorporates brown, grey, and white with accents of matte black metal and concrete wainscot.

The landscaping scheme emphasizes native, drought-tolerant species, including ironwood, bougainvillea, and agave, surrounded by decomposed granite—a plan that adheres to city standards for visibility and water conservation.

Founded in 1986 by the Vasquez family, Someburros specializes in traditional Sonoran cuisine. The restaurant group has seen substantial growth in the Phoenix metro area, operating over a dozen locations. Maricopa will be the second in Pinal County, joining an existing site in San Tan Valley.

The restaurant will be established on a 1¼-acre lot in the Stonegate development, which is also set to host a dental clinic, Starbucks, and “Oil Express” on an adjacent parcel. This area recently underwent a successful replat to increase the number of lots from three to four.

Planning also includes a Buffalo Wild Wings at the same corner, although developments on that project have stalled for nearly a year.

The design package for Someburros is now in city review, and further details on the construction timeline remain undisclosed. While the Maricopa location is not yet listed on the Someburros website, a new site is advertised as “coming soon” in Buckeye.
