A taste of history

Mariscos El Pulpo Loco, a historic Mexican seafood restaurant, was a familiar sight for those traversing the railroad tracks at John Wayne Parkway and Maricopa-Casa Grande Highway. Owned by Eliva Coronado, a Maricopa resident, the restaurant became known for its vibrant sign featuring an octopus.

Coronado explained the whimsical name, “The Crazy Octopus,” was conceived by her husband and cousin. “They walked in one day and decided they had thought of the greatest name. I found it hilarious and said, ‘Hey, why not? It will make people laugh.’ And who will forget that name?” Coronado said in 2010.

Mariscos El Pulpo Loco continued to serve seafood until at least 2010. By December 2015, it had made way for Spoons Chi Town Café. The building was eventually demolished in 2018 to facilitate the construction of the John Wayne Parkway overpass.

Before closing, Coronado shared her recipe for Bistek Ranchero, a specialty dish:

Bistek Ranchero

  • Ingredients:
    • Steak
    • Half an onion
    • Tomato
    • Jalapeños
    • Cup of cooked rice
    • Can of beans
    • Flour or corn tortillas

Directions: Cut the steak into chunks and dice the onion and tomato. Grill the steak, onions, and tomatoes until browned. Add jalapeños to taste. Add the rice and beans and sizzle for 10 to 15 minutes. Spoon the contents into a tortilla and enjoy.
