Roots Serves Up a Feast: Full Dinner Service and 7 Days of Culinary Delights

Roots Eatery, a popular dining spot in Maricopa, has announced new hours and menu offerings as it seeks to enhance its presence in the local food scene. Beginning January 6, 2025, the eatery will operate daily, providing a full-service experience to its patrons.

Owner Chris Spear emphasized the need for the café to evolve alongside Maricopa’s bustling culinary landscape. “We needed to ‘break some tricks out’ to accomplish this,” he stated, indicating that expanded hours were part of that strategy.

With a seating capacity of just 26, including outdoor space, Spear aims to maximize the restaurant’s potential. “That’s why we introduced wine dinners to stay in front of people and showcase that we know how to do more fine dining service,” he continued, highlighting the restaurant’s recent enhancements.

The daily schedule will feature service from 8:30 a.m. to 2 p.m., and from 4 p.m. to 8 p.m. Monday through Saturday. This marks the establishment’s first regular dinner service since opening its doors in The Shops at Maricopa Village in 2020.

Roots has also embraced innovative dining concepts in recent months, including a pop-up kitchen initiative that returns this weekend. The menu received an update on December 26, introducing new items like a brie and fig jam burger and a winter harvest salad for lunch, alongside a highly anticipated chicken pot pie for dinner.

During a small business town hall on December 12, Spear mentioned aspirations for a larger location to accommodate future growth. However, the search for affordable space in the city has proven challenging. “Roots wants to grow, wants to expand, but I can’t get in touch with anyone,” he expressed, underscoring the difficulties faced in his expansion efforts.
