Move Over, Nando’s: Rando’s Sets Its Sights on Becoming the Ultimate Taco Tuesday Destination!

Raceway Bar & Grille in Maricopa is embracing a fresh culinary direction with the launch of “Rando’s,” a pop-up Mexican restaurant. This transformation marks the establishment’s reopening on Tuesdays for the first time in five years, according to owner Rand Del Cotto.
The new menu, inspired by customer requests, features popular dishes such as taco salads, chiles rellenos, enchiladas, carne asada tacos, and fish tacos—Del Cotto’s personal favorite. “Our fried fish, served the same way for 17 years, is a crowd favorite,” he remarked, emphasizing the continuity in quality.
Customer enthusiasm has played a crucial role in shaping this venture. Del Cotto recounted a particular instance where a Texan, in search of authentic Mexican cuisine, ended up at Raceway. After enjoying the enchiladas, his praise sparked the idea for Rando’s.
This shift is significant not only for the menu but also for the restaurant’s operational future. Since the pandemic, Raceway has limited its hours, closing on Mondays and Tuesdays. Del Cotto referred to the reopening as a “monumental step” for the business, underscoring the necessity of adaptation in challenging times.
Raceway has been a staple at Papago Road’s only strip mall since 2007, and with the reintroduction of service on Tuesdays, it aims to enhance its community presence. “We’re the only thing out here, for God’s sake,” Del Cotto emphasized, reflecting on the establishment’s unique position in the area.
