Fili-B’s Food Truck Hits Maricopa After Long Quest for a Permanent Home

A new food truck located off John Wayne Parkway is gaining attention for its beloved Mexican fast-food offerings. The latest addition to the Filiberto’s brand, named Fili-B’s, has made its long-awaited debut, operating on wheels instead of a permanent location.
The bright-yellow truck, marked with #ItsFiliTime, is now stationed near LMR Pools, specifically at 19536 N. John Wayne Parkway, close to the historical water tower. Opened quietly on a Thursday, it has started attracting a steady stream of lunch-goers and late-night diners eager for classic items like carne asada burritos and rolled tacos.
Patrons should note that the food truck operates on a takeout-only basis and does not provide outdoor seating. Two cooks manage the offerings in the bustling parking lot, serving hungry customers throughout the operational hours, which are from 8 a.m. to 8 p.m., Tuesday to Sunday. Mondays are reserved as a day off.
This mobile venture follows nearly a decade of anticipation regarding the opening of a brick-and-mortar location in Maricopa. In 2017, Filiberto’s submitted plans for a restaurant in the Sonoran Creek Marketplace; however, those plans faced multiple delays and were ultimately abandoned. The same site is now slated for an Ono Hawaiian BBQ, confirmed by the city in April.
While Filiberto’s has not publicly disclosed the reasons behind the failed plans for a Maricopa location, the arrival of the food truck is being embraced by locals as a satisfying alternative.
