Easy Bake oven leads to five-star ‘noble’ bread

Jason Raducha’s baking journey began with an Easy-Bake Oven at the tender age of six. “It’s a convoluted, crazy story,” he reflects. His early culinary interests were further shaped by a West Bend bread maker gifted by his aunt, which sparked his love for creating bread and pizza dough.

Though Raducha initially pursued a degree in informational technology, his passion for baking never waned. He often describes the process of making bread as “the crazy alchemy of flour, water, and yeast.” In 2012, he decided to turn his passion into a business venture. “One day I woke up and said, ‘We’re going to change some stuff,’” he recalled.

Jumping into unknown territory, Raducha sought $20,000 through crowdfunding on Kickstarter. This initial investment was crucial for his business, as he discovered a community willing to support his vision. With this backing, he constructed a barrel vault “black oven,” a massive structure built for optimal heat retention.

His baking venture started small, operating out of his garage and selling at farmers markets. Demand quickly grew as chefs approached him, eager to feature his artisan loaves on their menus. Raducha faced challenges, including a cease-and-desist letter from a neighbor disturbed by the smell of fresh bread. Undeterred, he shifted his operations to his parents’ garage before finding a small space at a former sausage shop.

The bakery, initially a one-man operation, expanded from a couple of days a week to six, now employing around 200 people. His product range evolved from basic country loaves to include a variety of breads and pastries, ultimately filling two entire buildings.

Noble Eatery, which operates separately from the commercial bakery, offers a cozy environment where customers can savor individual loaves and sandwiches. The eatery’s seasonal menu, crafted from largely organic produce, changes weekly. Current offerings include innovative sandwiches and hearty family meal options that can serve four.

The eatery emphasizes sustainability, utilizing compostable materials for straws, plates, and cups. Raducha’s commitment extends beyond his business; he actively supports organizations that assist children and is preparing for a fund-raising bake sale for Phoenix Children’s Hospital.
