Cocina Madrigal Rises from the Ashes One Year After Devastating Fire

PHOENIX — After a devastating year-long closure due to a fire, Cocina Madrigal has opened its food truck, marking a significant milestone in its comeback. Located at the corner of 16th Street and Broadway, the restaurant previously earned accolades as one of the best in the U.S. on Yelp.
Co-owner Brian Madrigal recalls how his father, Leo, remained confident about the restaurant’s potential, given his familiarity with the community and culinary landscape. “Truthfully, my father was very confident, just given his experience and knowing the community,” Brian shared.
The unexpected fire caused extensive smoke and water damage, forcing the establishment to cease operations. Leo Madrigal expressed the hardship, reflecting on his uncertainty during the closure. “I work every day, and there were days that I was lost. What am I going to do tomorrow?” he said.
Despite the challenges, twenty employees remained on the payroll throughout the closure, demonstrating a strong commitment to their team. “When we were really busy, they were here and everything. And so we say, you know what? No, this is the right thing to do,” Leo explained. “It’s just that’s what we do. You know, we’re a family.”
The food truck, situated just 300 feet from the original location, is now serving about 80% of Cocina Madrigal’s beloved menu, featuring popular items like mushroom enchiladas, gorgonzola beef tacos, and al pastor tacos. The kitchen operates daily from 11 a.m. to 9 p.m., ensuring that the quality and taste of the food remain unchanged.
Looking ahead, the Madrigals anticipate the full restaurant reopening by the end of summer. “After, you know, over a year that we haven’t brought our food to the community, I’m very excited,” Leo said, reflecting the anticipation surrounding their return.
