The Roost Bids Farewell After a Decade: Who Will Fill the Void?
The Roost Sports Bar & Café, located on John Wayne Parkway, is set to close its doors permanently on December 22, 2024, after a decade of service. Owner Ralph Skrzypczak announced the decision on Monday, emphasizing the significance of the moment.
“And that’s a wrap! Dad and I are leaving the restaurant and bar game,” Skrzypczak expressed. He thanked patrons for their support, encouraging them to visit over the next few weeks to celebrate the holiday season and reminisce about shared memories.
Skrzypczak mentioned that “big changes” are ahead, with new management taking over at the beginning of the year. Sources indicate that a new Mexican restaurant is planned for the site. According to an insider, Mesa-based Chilaquiles Modern Kitchen is set to take over the former Roost space at 20800 N. John Wayne Parkway, Suite 101, in The Shops at Maricopa Fiesta.
The fate of The Roost’s employees remains uncertain. Skrzypczak previously shared that his staff had been reduced to 25 from 50 due to pandemic challenges. In a heartfelt video posted on social media, he noted the necessity of spending more time with family and hinted at future projects, including writing books and developing a marketing app.
Before it became The Roost, the establishment was known as True Grit Tavern, a nod to the iconic 1969 film starring John Wayne. Skrzypczak recalls the initial challenges of launching the bar in a strip mall, which preceded its appearance on Jon Taffer’s reality show, Bar Rescue.
The show’s focus on The Roost led to significant business growth, tripling its customer base overnight. Despite facing obstacles, including the pandemic, which forced a two-week closure, Skrzypczak adapted by restructuring operations and even giving away essential items like toilet paper during shortages.
Reflecting on the past, Skrzypczak carries a mix of nostalgia and optimism as he transitions away from the restaurant business, leaving behind a venue that has been a gathering place for the community.
